Gluten Free Pancakes

I’m sure you’ve seen the 2-Ingredient pancakes all over the internet. This is a slight twist on that recipe with some added oats. These are super easy, quick and delicious. You can pretty much tweak these to match any mood by changing the topping. A personal favourite of mine is blueberries in the batter whilst they’re cooking, topped with honey and ground almonds. You could even make them savoury! 

Ingredients – Serves 2
2 bananas
2 eggs
½ cup rolled oats
½ teaspoon baking pwoder
Pinch of salt
Maple syrup, to serve (optional)
Fresh fruit of your choice, to serve

1. In a blender, combine the peeled banana, eggs, oats, baking powder and salt.
2. Allow to blend until the mixture is as smooth as you want it and blended well. Allow the batter to stand for 10-20 minutes until thickened slightly. Heat a non-stick frying pan over medium heat.
3. Fry spoonfuls of the batter until golden brown on both sides.
4. Serve with a drizzle of maple syrup and fresh fruit of your choice.
