Dairy Free Chia Pudding

Delicious, easy, dairy free and pretty healthy! What’s not to love?!

I don’t weigh anything, I do this purely on sight. Chia seeds absorbs heaps of liquid so don’t worry if it seems way too juicy. It’ll be primo!

Ingredients

Chia seeds
1 can of coconut milk
1 can of coconut cream
1 can of fruit (this is boysenberry)

Toppings

Sprouted buckwheat groats
Fresh fruit
Granola
Coconut Yog

Method

1. Pour can of coconut milk, can of coconut cream (blended together) and can of fruit to a bowl. Add chia seeds. You want it to be way more liquid than seeds right now.

2. Pop in the fridge overnight. Stir occasionally.

3. Top with whatever! Happy days.

Mix and match with more coconut milk or more cans of fruit to suit your tastes. This one had three cans of fruit, two of coconut milk and one of coconut cream to about 200g of chia seeds. Made a massive batch for me and my housemate! Will last in the fridge for 5 days or so.
