Rice pudding is such a guilty pleasure for me, I have loved it since I was a kid. And let's be honest, does anyone ever cook the right amount of rice when they make dinner? I know I certainly don't! I wanted to find a way of using up my leftovers whilst making something delicious, and so I found this easy recipe and tweaked it for my dietaries! (You don't have to have cooked too much rice though, this works from fresh too!)

Apple Porridge is such a personal favourite of mine, I can't get over how much I love this. There was a period of about two weeks where I must have eaten this for breakfast and lunch every day.
