Baked Eggs with Ricotta and Kale

I made this for breakfast one morning during the first weight loss stint and ended up having it everyday for the rest of that week. It'sΒ that good. It's also super quick and an easy winner for any brunch date.



Shakshuka is a Middle Eastern breakfast dish where you poach eggs in a tomato sauce. I, however, love it at any time of the day. It's super easy to whip up and is great served with a side salad, a portion of rice or bread (if you're not gluten free).Β
