Easy Vegan Rice Pudding

Rice pudding is such a guilty pleasure for me, I have loved it since I was a kid. And let's be honest, does anyone ever cook the right amount of rice when they make dinner? I know I certainly don't! I wanted to find a way of using up my leftovers whilst making something delicious, and so I found this easy recipe and tweaked it for my dietaries!
